Cassava Flour Paleo-Friendly Flat Bread

Ingredients:

  • One can of Coconut Milk (13.5 oz can)

  • ¾ of a cup of Cassava Flour

  • ¾ of a cup of Tapioca Flour

  • Pinch of Sea Salt

How to:

  • Preheat a small nonstick pan over a medium heat.

  • Mix all the ingredients into a bowl.

  • Stir well and avoid lumps. You want quite a thin batter (add water if needs be).

  • Pour enough batter into the pan to cover the bottom of the pan + about ⅛ to ¼ thick.  You want them to be a little thicker than crepes.

Cook for about 3-4 minutes each side, or until the batter looks completely dry when you flip it. The cook time will be less the longer you are cooking (as the pan is hotter).

Remember it can take a little practice to get it just right - you don’t want it to be gummy and raw, nor burnt. It’s well worth the patience and practice time.
